Lamb has been regarded as the food of poor people and thus to be avoided by diners of refinement all the time. It’s time for us to overcome the bias and appreciate many good aspects of lamb. 8 lion or rib lamb chops

each about 6 ounces and 1 ½ inches thick

3 tsp olive oil

Kosher salt and freshly cracked black pepper to taste




The most important thing is to control the fire well. It’s necessary for us to build a two-level fire, which means that you need to put all the coals on the one side. What is it for? For better doneness. And when the flames have gone out, all the coals are covered with grey ash, put the lamb chops on grill.



But before that, please remember rub the chops with the olive oil, sprinkle them with the salt and pepper. Then place them directly on the heat of grill for about 3 minutes per side. Keep your eyes on it and make sure it is your desired doneness.





Remove the lamb chops with foil from the grill, and serve it after resting for 5 minutes.
